Choosing an SEO company for everything that comes along with ranking your website can be a daunting task. I'll go over a few things that you should ask or go over with the company before deciding to sign up or sign a contract.
There are thousands of online marketing companies out there, but which do you pick and will they actually help you out?
Getting recommendations online from forums is pretty much pointless because everyone will start posting their own websites or affiliate links. So you'll have to do your own research here, sorry. You can go through the SERPs and compile a list of SEO companies that show up, but even then you'll have to do your due diligence. Go through your list one by one and check if they are listed on popular review platforms like Yelp, yellowpages and superpages. It's not a big deal if they are not listed on these platforms because they are a digital company and not all of them will have offices. Look over the reviews you can find and see if they are positive or negative. You can usually get a feel of how the company works based on it's clients reviews. I like using Yelp to see reviews because they are moderated and not auto accepted like other platforms. And even if a company can get their positive reviews green lit on Yelp so they automatically show, it means their pretty tricky and I like that 
NEVER take any reviews on their own websites seriously. I know that I've posted my own reviews as a client and posted them in my "Testimonials" section. I'll post some great content about myself in order to close a deal before they even contact me lol.
Another great way to see what's going on with a company is to type in their domain name and add scam after it. An example of that would be: mywebsite.com scam Doing this will show anything that has the title consisting of the website URL and the word scam. Sometimes you have to take these reviews with a grain of sale because they are usually just from clients that didn't know what they were buying and decided to post something malicious because they thought they were being taken advantage of, which is sad but does happen often.
After you whittle down your list of companies to just a few, now you can start contacting them one by one via email.
Ask them the following:
Do you guarantee first page rankings?
If they say "YES WE DO!" you should stop talking to them immediately because they are just trying to get you to sign up in order to make money. NO ONE can guarantee first page rankings, even super awesome SEO companies like the one I run ;)
How long until I will be #1 for "keyword"?
If they tell you it will only take a week to rank for a specific keyword, you should not use this company. If they come back and say "It's hard to say, it could take a week or a year, it's all up to the search engines if they want to push your website to the top. But we do everything possible to get you there without getting any penalties. We've gotten many top placements for our clients, and each takes a different amount of time due to their competition." See what I did there? I didn't give a guarantee but I told them I could get them there eventually. All good SEO companies will say something like this, they know they can do it, but it takes time.
If I sign a contract, will it be null and void if you don't show any results?
Any good SEO company will agree to this, because we will actually be doing the work in order to increase your rankings and we know we can get you moving over time. Generally I will write in the contract that after 6 months if there is no positive movement for the clients main keyword we can void the contract and the client can stop paying. But this has never happened to me since I tend to get high rankings for my clients over time
Now those are just a few questions that can make or break your decision on the right SEO company. And ask them in that order because you can get a good understanding of how the company works

I would be worried if they can't give me a more specific time table until I get some results. I completely understand that is not in their hands but being an experienced SEO Company, having a great portfolio in their backyard, they should be able to approximate a deadline for their work based on statistics.
Every SEO Company has, or at least should have a master plan when they begin analyzing a website, knowing exactly keywords they should rank on, what's the competition on this keyword and what's the current position in Serp.
