If I am a disgruntled customer, how do I go about invoking a seller's guarantee? On the other hand, if I have a disgruntled customer, how do I go about refunding the guarantee percentage amount I have specified in my work order?

So firstly, as a buyer, you cannot invoke a sellers guarantee so much in that you can't use the guarantee to get 100% of your money back if the guarantee is only 20% or something. That would only work if the guaranteed reject refund percentage was 100%.
In order to get a full refund, you will have to cancel the order using the Mutual Cancelation option before it's too late in which case the seller can agree to the mutual cancelation request and your funds are returned to you.
Or if the order has already been delivered, you can of course reject the work after it is delivered but only if the work is not as advertised in the sellers service description and you don't think they've done what they said they'd do.
They could then choose to accept this rejection and you would be refunded the amount that was specified in the refund percentage rate.
I think that's all right. But in most cases, it's best to work out something amicably with the seller and reach a mutual decision on something. If at all possible, try to work something out with the seller such as getting them to redo the work, or add more or provide something else instead.
If you ask most sellers this if you had a problem with their work, most of them would be happy to provide you with one of their other services instead if it means they get a good rating/review from you and you'll be more likely to use them again in the future.
Now as a seller, you can choose mutual cancelation or force cancel the order. Using both options refunds the buyer in full I believe. But you can't refund them the amount set in the guarantee percentage amount you have specified.
That only applies if the buyer rejects the order or it is refunded back to them after a mutual cancelation.
